How to Steep Gourmet Teas

  1. Choose a fresh tea. Teas should not be powdered because, like any cured plant, it oxidizes in the air, causing it to lose its flavor. Don't use too much! These teas are very fresh.

  2. Use pure water. Boil the water and let it cool or add a blip of cold water before pouring; about 170 to 180 degrees is usually ideal.

  3. Prime. Pre-steep first for about 60 seconds, then pour out the first steeping. This optional step warms the cups, primes the leaves for infusion and removes much of the caffeine.

  4. Steep. Now infuse the tea for 1-4 minutes, depending on the strength desired. (Careful. Don't steep too long, or it will become too strong.)

  5. Pour. If you primed the cups, pour the first-steeped tea out, and pour the freshly-steeped tea into the now-warm cups.
